Burritos

 


Ingredients

For two people

- Jumbo tortillas
- Lettuce (just grabbed some from the garden)
- A tomato
- Fresh or rubbed coriander
- 150g of mince
- A can of beans (any beans will do, I used 3 bean mix)
- 1T of tomato paste
- 1T of ground cumin
- Taco seasoning
- 1t minced garlic
-1C of rice (brown or white)
- 2-3T of unsweetened greek yogurt or sour cream
- 1/3C of cheese

Instructions

- Cook mince, taco seasoning, garlic and beans together until done

- Cook rice as per instructions but add tomato paste and cumin

- Dice the tomato and shred the lettuce

- Chuck wraps in the microwave for 10 seconds to soften them (one at a time)

- Wrap up rice, bean+meat mix, lettuce, tomato, coriander, cheese and sour cream/yogurt in 1 or 2 wraps (I used two wraps because I wanted BIG burritos)


- Once wrapped up, place on a hot pan with a little oil or in a toast machine to toast



BONUS LUNCH

I had some leftovers so I made some quesadillas and dipped them in the greek yogurt!
