Ingredients
(Serves 3-4)
300g chicken breasts, cubed
1 can of tomato paste (170g)
1 onion, diced
30g spinach
2 cubes of chicken stock, crumbled
500g pasta
1C cheese
1/4C unsweetened greek yogurt
1t oregano
2t paprika
1t crushed garlic
S&P
Instructions
Bring a pot of water to boil and add your pasta, boil till almost cooked, drain but reserve about a cup of pasta water
Add you chicken, tomato paste, herbs and spices, stock, garlic and onion to a deep pan on medium heat with a little oil
Once the chicken in almost cooked add in your yogurt and stir
Add pasta water a tablespoon at a time till you have a sauce that's not too runny but not too thick
Bring to a simmer and allow chicken to finish cooking, cut open a piece if you aren't sure
Turn the heat down to low and add your pasta, spinach and cheese, stir until pasta is coated in sauce and cook for a further couple of minutes till the pasta is al dente and the spinach is wilted
Season with S&P to taste
