Chickpea Curry



 

Ingredients

For 2 People

1 Carrot
1 Potato
1/3C unsweetened greek yogurt
1 Can crushed tomatoes
1 Can chickpeas
1T crushed garlic
1/2T ginger
1/2t turmeric
1/2t garham masala
1/2t ground coriander
1t cumin
Pinch of cayenne or chilli powder

Instructions

Add all ingredients to a pot, cover and leave to simmer until raw veggies are soft

- If the curry is beginning to thicken too much and the veggies aren't cooked, add some chicken stock and continue to cook covered

Serve with rice and whatever random thing you can turn into garlic bread (I used leftover burger buns I had in the freezer...I burnt them a little oops)
