Ingredients
For two large servings
1 Ripe avocado
500g Pasta
200ml Cream or milk
1T lemon juice
Handful of fresh basil or 1T of dried basil
1t Crushed garlic
1/2C Grated cheese
S&P to taste
1/3C Sun Dried tomatoes (Optional)
Instructions
Cook pasta till slightly undercooked (Not mushy, still has a little crunch) and reserve 1 cup of pasta water
Blend cream or milk, lemon juice, basil, avocado, garlic, tomatoes and S&P in a blender. If the sauce is too thick, add a little pasta water until its the consistency you want
Add sauce to pasta on low heat till the pasta is fully cooked
Add cheese and stir it through
