Thai Red Curry


Ingredients

For 2 large servings

150g Diced chicken
1 Broccoli
1 Capsicum
Can of tomatoes (Diced, Cherry or whole peeled)
Can of pineapple chunks
Can of coconut milk
packet of thai red curry mix

Instructions

Add chicken, capsicum, and broccoli with the red thai mix and cook on low-med heat till the chicken is cooked

Add all the cans and let it simmer on medium heat for 15-20 minutes, Stir occasionally

Serve with rice (I cooked my rice with some spring onion and chicken stock)
