Vegetarian Nachos

Ingredients

Serves 2

1 can bean mix
1 can crushed or whole tomatoes
1 can corn kernels, drained
1/2 onion
1/2C diced capcicum (I used frozen)
1 punnet sour cream
Corn chips
Cheese to top
1t onion powder
1t crushed garlic
1t oregano
2t cumin
2t paprika
S&P

Guacamole
1 ripe avocado
1/2t crushed garlic
1t lemon juice
S&P

Instructions

Add beans, spices, garlic, capcicum and onion to a pan/pot on medium heat and stir for 2-3 minutes

Add tomatoes and corn and bring to a simmer for 10 minutes, stirring occasionally

While that is cooking add all your ingredients for guacamole to a bowl and mash with a fork

Taste the nacho mix, add a crumbled beef stock cube or salt and pepper

Spread corn chips on a plate, add the nacho mix and top with cheese, guacamole and sour cream
