Ingredients
(Serves 2)
2 chicken breasts, sliced horizontal
1/3C honey
1/4C lemon juice
1t crushed garlic
1T soy sauce
1T rice wine vinegar
Veggies
Rice (I like brown rice because it has more fiber)
Instructions
Begin by cooking your rice and steaming your veggies
Mix your honey, lemon juice, garlic, soy sauce and vinegar in a bowl to make the sauce and set aside
On medium heat add you chicken breasts to a pan with a little oil and spoon over 1/2 of the sauce, cover the pan
Once one half of the chicken is a golden colour on the pan side, flip and spoon the rest of the sauce over the chicken and cover till the other side is a golden brown colour.
Sacrifice the thickest piece of chicken and cut in open to ensure its properly cooked
If not turn the heat down to low and cover the pan for another 5 minutes
Serve the chicken with your rice and veggies, pouring the leftover sauce in the pan over your rice
Season with salt and pepper to taste
