Γιαγιά's Meatballs


Foreword:
This recipe was given to me by my partners grandmother (γιαγιά), Thank you for all the love you showed me and for raising such a wonderful family, we miss you.

Ingredients

Serves 2

250g beef mince
1/2 onion, finely diced
1 egg
1 & 1/2 slices of bread
a small handful of dill
flour
S&P
Veggies (I used 1 broccoli, and 2 carrots)
1C rice
1 cube of beef stock
1 avocado

Instructions

Cook your rice and steam your veggies, add a crumbled cube of beef stock to your rice

While that's cooking, fry your onion till its soft and let cool

Soak your bread in water and squeeze out the excess, add to a bowl with mince, dill, egg, onions and salt and pepper

Mash together and form your small meatballs

Roll your meatballs in a small amount of flour to help them keep their shape

Add to a pan on medium-low heat with a small layer of oil on the bottom

Cover pan and cook for 5-10 minutes until one side is brown and flip

Cook covered for another 5-10 minutes till the other side is brown and cut one open to ensure its properly cooked, if not reduce heat to low and continue cooking it covered

Once cooked, add rice to the bottom of a bowl, then veggies, meatballs and avocado on top

Can be eaten hot or cold (my partner loves it cold), you can also add some sauce on top, I like japanese mayo
