Paprika Mushroom Soup


Ingredients

Serves 2

300g white button mushrooms, sliced
1/2 onion, diced
1T butter
1t crushed garlic
1t dill
1T paprika
1t lemon juice
1t soy sauce
1C vegetable stock
1/2C milk
1/4C unsweetened Greek yoghurt
1T flour
Salt and pepper to taste

Instructions

On medium to low heat melt butter with onions and then add mushrooms

Cook mushrooms for five minutes until brown then add garlic herbs and spices soy sauce and lemon juice

Sprinkle flour into pot and stir

Add milk and vegetable stock, bring to a simmer and cook for further 10 minutes

Remove pot from heat and stir in unsweetened yoghurt

Add salt and pepper to taste

Serve hot
