Beef Enchiladas

Ingredients For 2 people

- 1 can of diced tomatoes
- 1 can of mixed, black or kidney beans
- Taco seasoning
- Tortillas
- 150g of mince
- 1/2 a brown onion
- 1/2t crushed garlic
- 1/2t tomato puree (optional)
- 1/2 Cup of cheese
- Salt and Pepper to taste

Instructions

-Preheat oven to 180 bake

-Cook mince in a little oil in a pot or pan with onion, beans, tomato puree, garlic, taco seasoning, salt/pepper and Half the can of diced tomato on medium heat until the onion and mince are cooked

-Switch the heat to low and simmer off some of the water until theres only a small amount of water left, remove from heat once done

-Grease the bottom of a dish and prepare wraps but microwaving them for 30 seconds (helps them not split while rolling)

-Add mince and bean mix to wraps. Easiest way to do it is hold the wraps up like a taco, add filling and roll the wraps up (kinda like a brandy snap)

-Keep doing that and place them side by side until you fill up the dish

-Spoon the rest of the can of diced tomato onto the top of the wraps and spread thin

-Add cheese to the top a bake uncovered in oven for 30-40 min (you want the wraps to be slightly brown on the edges)

-Serve with some chopped coriander on top if you're feeling fancy!
