Teriyaki Chicken on Rice

Ingredient

Serves 2

300g Chicken Breast
1/2 Cucumber, diced
1 Avocado
100g Teriyaki Sauce
1C Rice
Kewpie (Japanese mayo)
Sesame seeds (optional)

Instructions

Cook your rice as per instructions on the packet

Boil chicken in water for about 20 minutes (till fully cooked)

Drain water and shred chicken (I used a whisk and went to town but you can use you fingers)

Mix teriyaki sauce with chicken

Layer with rice on the bottom and chicken, cucumber and avo on top

Drizzle mayo on top and add sesame seeds
