Ingredients
For 2 servings
1 Broccoli
1t Garlic
1/2 Chopped onion
4C Chicken stock
1/2C Grated cheese (parmesan preferably but normal cheese works)
1T flour
150ml Cream
S&P
Instructions
Add onion and garlic to a pot with a little oil and cook on medium heat until mostly translucent
Take off heat and add flour, stir around so any excess oil is soaked up and onion is coated
Add chicken stock and return to high heat
Once stock is boiling, add broccoli
Cook broccoli till soft but still green, then reduce heat to low
Add cream and cheese and stir
Use an immersion blender to blend the soup till it has no chunks and add salt and pepper to taste
Serve with some cheese on toast!
