Rice paper rolls

Ingredients

Makes 14 rolls

250g beef mince
1/2 onion, diced
2 carrots, finely cubed
2t crushed garlic
1t ginger
1t coriander
1/2T rice wine vinegar
2T soy sauce
 2t sugar
S&P
Rice paper

Sweet chilli sauce to dip

Instructions

In a medium temp pan cook carrot till soft

Add onion, mince, herbs, spices, sugar, soy sauce, vinegar and salt and pepper to taste

Cook till mince is fully cooked and onion is translucent

Set aside to cool

Submerge rice paper and warm water till soft enough to fold and add a heaping tablespoon of mixture to the centre

Fold sides around the mixture and wrap again in another piece of wet rice paper

Add directly to a cold pan with some oil while you make the others

Turn the heat up to medium and cook rolls until one side is brown then flip and brown the other side

Serve with sweet chilli sauce but beware they are very hot straight out of the pan
