French Onion Soup


Ingredients

(For two people)

3 Large brown onions
1 Heaping teaspoon of marmite (see notes)
Cheese
2T butter
1t Crushed garlic
1t sugar
2C of chicken stock and 2C of beef stock
French bread (I used the off cuts from the subs i made earlier)
S&P
Italian herbs (optional)

Instructions

Cut up onions into slivers and add to a pot with butter

Caramelise the onions over medium heat until they are gooey and translucent (stir frequently, this can take about 30 minutes)

Add garlic and stir for another 3 minutes

Add marmite to about 100ml of hot water and mix till the marmite is dissolved

Add marmite, stocks, sugar and S&P to taste to the onions and reduce to low heat while you sort out the bread

Lightly butter your bread and add some Italian herbs if you like

Toast the break on a baking tray in the oven at 200 grill still the bread is lightly toasted

Once done, add soup to bowl, place bread on top and add slices of cheese

Place in oven on same setting till the cheese is melted

Beware, the bowl will be very hot so put the bowl on a plate to serve.

**Notes**
French onion soup is a "Fancy" dish that is typically made with dry wine, gruyere cheese and sometimes brandy too. That sound expensive! To try and mimic the acidity of the wine, I opted for marmite. You dont have to do this but I found it worked quite well. Under this is the recipe I got my inspiration from, follow that if you prefer
