Ingredients
Pesto dip (it was the cheapest)
250g mascarpone (see notes)
Splash of lemon juice
1t crushed garlic
500g penne pasta
1/3C grated cheese
Instructions
Boil pasta until almost done, drain water but leave about 1C of pasta water in the pot
Add everything to the pot and cook on low heat till everything is melted and the sauce is thick
Serve hot with a sprinkle of cheese on top
**Notes**
Why on earth did I use mascarpone?? I made tiramisu earlier in the week and only used half of the packet.. Mascarpone is expensive to buy but quite easy to make at home (I didn't have time). There are plenty of recipes online that use cream instead. Here is the recipe I took inspiration from and the recipe for homemade mascarpone.
