Pumpkin Soup


Ingredients

For 2 servings

1 onion, chopped into quarters
1/4 pumpkin
1/3C unsweetened greek yogurt
2C chicken stock
1T crushed garlic
S&P

Instructions

Cut rind of pumpkin off and then cut remaining into cubes

Add pumpkin, stock, garlic and S&P into a pot and bring to a simmer

Once pumpkin has softened, add yogurt and blend soup with an immersion blender until the pumpkin and onion is all blended up

Serve with some buttered toast
