Ingredients
For 2 Servings
1 Broccoli cut into stems and florets
1t Crushed Garlic
3C Chicken Stock
2C Water
3/4C Couscous
S&P
Instructions
Boil broccoli in stock and water for at least 30 min still soft
Reduce heat and mash the broccoli in the pot (if using an immersion blender, only blend it lightly, you want it to still be a little chunky)
Add garlic and couscous and stir occasionally till the couscous is fully cooked
If using reduced salt stock, add another cube of chicken stock or more salt to get some more flavour.
Serve with some grated cheese and crushed pepper on top
