Chicken Alfredo


 

Ingredients

For 2 servings

1 chicken breast
1C chicken stock
1t crushed garlic
1 onion
1/2C cheese
1/2C cream
1C milk
S&P
250G pasta

Instructions

Dice the onion and with 1T of butter or oil, add to a pan on med-low heat and stir occasionally (we want to caramelise the onion). It should be a brown/gold colour once done

While the onion is caramelising, cut the chicken breast in half and add salt and pepper to each side.

Add to a pan on medium-low heat and cook low and slow, when the sides brown, remove from pan and cut it in half again to see if its cooked in the middle, set aside to rest

Add milk, cream, garlic and stock to a pot and bring to a simmer then directly add the uncooked pasta.

Once pasta is cooked, cut chicken up and add to pot with cheese and the caramelised onion

Top with cracked pepper and Italian herbs
