Homemade Gnocchi in Tuscan Sauce


Ingredients

For two servings

3 white potatoes
1C flour
1 egg
1/2C cream
1/4 sun-dried tomatoes (Drained)
1/2C cheese
1t oregano
1t crushed garlic
1C chicken stock (oxo cube)

Instructions

Peel and boil potatoes until mostly soft (you don’t want the potato to fall apart when you stick a fork in it)

Once done, reserve a cup of the water and use it to make the chicken stock

Push the potato through a ricer or colander 

Mix potato with flour and egg to form a dough, continue to add flour if too sticky

Wrap dough and set aside while making sauce

Add cream, garlic, oregano, sun-dried tomatoes, and stock to a pot on medium heat

Allow sauce to simmer for 5-10 min, stirring occasionally 

Cut dough into quarters and roll out sections into long logs, cut to the size you want

Sprinkle flour over the gnocchi and add to a pot of boiling water

Once the gnocchi rises to the top of the pot, its cooked

Meanwhile, mix cheese into sauce, if not thick enough add a little flour to thicken it

Stir sauce through pasta and serve immediately
