Ingredients
Serves 3
300g chicken breast
1/2C peas
3 potatoes
2-3 carrots
1-2 eggs
1C flour
1C breadcrumbs
Gravy mix
S&P
Salad to serve
Instructions
Chicken
Cut the breasts in half horizontally, lay out on a chopping board and cover top with cling wrap
Get a rolling pin or even your fists and beat that chicken up (tenderise it)
Cover each piece in flour (shaking off any excess)
Then dip each piece in egg and finally covering in breadcrumbs and salt and pepper
Spray with a little oil and cook in an air fryer on 200C for 12 min, flipping over half after 6 min
If you don't have an air fryer, shallow fry in a pan with some oil on med heat till golden brown and cooked inside
Veggies
Peel potatoes (optional, I can never be bothered)
Cut potatoes into quarters and add to boiling water for about 20-30 min
Meanwhile preheat the oven for 180C bake for the carrots
Chop carrots up how you like and add to a baking tray
Season with salt and pepper and spray on some oil
Bake carrots in oven for 25 min
Once able to stick a fork in potatoes with little effort, drain and mash, adding a little butter or milk if you like
Throw some peas into the mash
Putting it all together
Make up gravy as per instructions
Chuck everything on the plate including some salad
put dressing on the salad and gravy over everything else
Invited the ex flatmate over for this one!
