Ingredients
Serves 2-3
1 can chopped tomatoes
1 can cannellini beans
4C veggie stock
1C green beans or whatever veg you have in the freezer
1/4C tomato paste
1/2 onion, diced
1 carrot, diced
2 chorizo sausages, diced
1t crushed garlic
1t italian herbs
S&P to taste
Instructions
On medium heat, fry up the onion and chorizo for 3-5 minutes (this will help release the oil in the sausage)
Add everything else and bring it to a simmer and leave for about 25-30 minutes, stirring occasionally
Once the veggies are soft, serve with some buttered toast
