Ingredients
Serves 3-4
250g mince
1 can chopped tomatoes
1 can whole tomatoes
1/2 onion
1-2C frozen veg
2 oxo cubes (crumbled, not in water)
1t oregano
1t crushed garlic
1t soy sauce
2C milk
1/4C flour
30g butter
1C cheese (and some more for the top)
pinch of nutmeg
lasagna sheets (I completely forgot to take a photo of them)
Instructions
With a little oil on low-med heat, add mince, onion, garlic, oregano and soy sauce to a pot and cook until mince is fully browned
Then add cans of tomatoes, frozen veggies and crumbled stock cubes, on medium heat, let simmer (covered) for 20 minutes while you make the cheese sauce
To make the cheese sauce, on medium heat melt butter in a pot
slowly add flour and consistently mix it with a whisk (it'll be like a dough almost)
Then slowly add milk while whisking until all the milk is added and there are no lumps, add your pinch of nutmeg and cheese and whisk it in
preheat the oven for 180 bake
Add a tiny bit of tomato/meat sauce to the bottom and lay a layer of lasagne sheets
layer the lasagna like this

Cook in the oven for 30 minutes until starting to brown on top
serve with a salad or eat the entire dish with one other person like I did
