Ingredients
(Serves 3-4)
250g chicken breast, cubed
1 onion, diced
1 can of coconut milk
1 can of chopped tomatoes
2C assorted veggies
1 1/2t crushed garlic
1t crushed ginger
1T lemon juice
1t cumin
1t turmeric
2t coriander powder
1/2t chilli powder
S&P
Rice to serve
Instructions
Add chicken, onion, all herbs and spices, lemon juice, garlic and ginger to a pot on medium heat
Cook for 5-10 minutes till the chicken is mostly cooked, stirring frequently
Add your canned ingredients and veggies and bring to a simmer
Allow curry to simmer for 10-15 minutes, stirring occasionally
Serve over hot rice with garlic bread on the side
