Ingredients
(Serves 4)
500g pasta
1/2 onion, diced
5 mushrooms, sliced
1C chicken stock
1/2C milk
3/4C unsweetened greek yogurt
1C grated cheese
2T crushed garlic
1T oregano
S&P
Instructions
Half cook your pasta and set aside, reserving a cup of pasta water
Add butter, onion, oregano, garlic and mushrooms to a pot on medium to low heat, stirring frequently
Cook till the onions are soft and translucent
Add milk, chicken stock and pasta to the pot, bring to a simmer and remove from heat once pasta is fully cooked. Adding reserve pasta as necessary
Once removed from heat, add yogurt and cheese, stir and add S&P
(Note it is important to only add yogurt once you remove the pasta from heat)
Serve hot
