Ingredients
Serves 2
300 g chicken breast, cubed
1/2 onion, diced
1C mixed veg
2T crunchy peanut butter
1T tandoori paste
1T curry powder
1 can of coconut milk
1T lemon juice
1T soy sauce
1C vegetable stock
1C cooked rice
Instructions
Cook rice as per instructions on the packet
Cook onion and chicken on medium heat onions is translucent and chicken is fully cooked
Add curry powder, tandoori paste, peanut butter, soy sauce and lemon juice, cook for a further two minutes
Add vegetables, coconut milk and vegetable stock, turn the heat down to low and cook for further 10 minutes until sauce begins to thicken up
Serve curry over rice
