Ingredients
For 2 people
- Lettuce ( I used about half)
- 150g of diced chicken
- 2 T of butter
- 1 1/2t of crushed garlic
-Half a cup of unsweetened greek yogurt or mayo
- 1/2t of mustard
-S&P
-1/2C of cheese (I used Colby, parmesan is recommended)
- 1t oyster sauce
- 2 slices of bread
- 1T of lemon juice
Instructions
Chicken
- Grill chicken in a small amount of oil and salt and pepper (feel free to season it how you like)
Dressing
- Combine lemon juice, mustard, 1/2t of garlic, oyster sauce and yogurt in a bowl and combine
Croutons
- Cut up bread into small squares
- Melt butter and remaining garlic in a bowl (add herbs if you like)
- Combine with bread until all the bread is coated
- Place evenly on a tray in the oven at 200C fan grill until the croutons are beginning to brown
Putting it together
- Mix the lettuce with the dressing and most of the cheese
- Top with chicken, croutons and remaining cheese
